Celtic Apple Crisp
Ingredients:
- 3 lb cream cheese
- 1 3/4 cup sugar
- 3 eggs
- 1 1/2 to 2 cups Amarula liqueur

Filling: Cream the sugar and cream cheese on low speed (mixer). Add one egg at a time until mixed. Add the Amarula liqueur and stir. Add more liqueur if you would like, but increase the eggs by one.

Crust: Use any cookie crust you like in a spring form pan. Add the batter and cook at 350 degrees for about 30 to 45 minutes and then test at one-minute intervals until a toothpick comes out clean.
