History of Bourbon


In the late 18th century, a Baptist Minister, Elijah Craig, first introduced bourbon in Georgetown, Kentucky. Since then, many farmers in Kentucky started to produce the whiskey, including the father of Abraham Lincoln. Bourbon distillation was popular for European setters. First European settlers in Kentucky began bourbon distillation at Ford Harrod, where now known as Harrodburg in Mercer Country, KY. In 1791, the Whiskey Rebellion took place when the government introduced taxes on whiskey in Pennsylvania. Whiskey distillers fled to the mountain in Kentucky to escape from the tax collectors. There they started corn plantation with Kentucky's limestone water. In the 19th century, many of historical bourbon distillers were born including Colonel James Beauregard Bean and George Dickel. Today, about 80 percent of bourbons are produced in the State of Kentucky.


Bourbon was named after the French Royal Family in 1758. Due to the support from France for American independence from British government, French words were often used to name new discovered lands. In the 1780s, Virginia began to separate Kentucky regions and named one of the lands after French General, LaFayette. The State of Kentucky that we know today used to be the Kentucky District of Virginia. By 1785, Bourbon County was found. Much later in 1972, Kentucky became a state. Meantime Bourbon County scaled down to the size as it is today. It once contained over 30 modern counties. Whiskies were shipped through the Ohio River to New Orleans. One of the Ohio River ports in KY was at Maysville where later became a town called Limestone. In 1789, Limestone and Northeastern Bourbon County joined together and became Mason County, Virginia.


According to the United States Federal Law, bourbon must be distilled from a mash at least 51 percent of corn, at between 80 to 160 proof. Barley, wheat, rye may be used for blending. Bourbon's sweetness and softness comes from corn. Bourbon is distilled in a continuous still first and then transferred to oak casks for aging. Bourbon must be aged for a minimum of 2 years in oak casks based on US regulation. About 25 years of aging create smooth and balanced bourbon taste. The Law also prohibits selling foreign bourbon in the United States.
