Many restaurants make money at the bar, food doesn't make as much money as the bar makes. And the class shows why.
Behind the bar, some bars may keep the 'well liquors' where the bartenders can reach easily. Those well liquors range from $5 - 8 USD and that's what they use to mix cocktails when customers don't specify the brand when ordering.
Some bartenders may ask you if you want your martini with Tanqueray or Bombay because they want to 'upsell.'
