Caribbean Rummy Guacamole
Ingredients:
- 4 California Avocados
- 1 oz light rum
- 1 tbsp fresh lime juice
- 1 cup finely diced fresh mango
- 1 cup diced fresh pineapple, well-drained
- 1/4 cup shredded coconut (unsweetened)
- 1 tsp. crushed red pepper flakes
- 1 tsp. salt

Coarsely mash (do not puree) California avocados. Fold in remaining ingredients. Serve with plantain chips. Guacamole is best made as close to service as possible. Store in an airtight if needed.
