Cooking with Spirits
French Spinach Salad with Eau de vie sauce
(Makes 4 servings)
Ingredients:
- 8 oz fresh spinach
- 1/2 cup feta or goat cheese, crumbled
- 1/4 small red onion, thinly sliced
- 1/2 cup Craisins Original Sweetened Dried cranberry
- 2 tbsp toasted sliced almonds (optional)

Eau de vie dressing:
- 4 oz Eau de vie
- 1/4 oz Cointreau
- 2 tbsp orange zest
- 1/4 cup balsamic vinaigrette
- 1/4 cup extra virgin olive oil

Wash and clean spinach thoroughly. Tear into bite size pieces and place in a serving bowl. Add half of the feta or goat cheese and onion; toss to combine.

Combine dressing ingredients in a small mixing bowl. Pour over salad and toss to coat. Sprinkle with remaining cheese. Top with sweetened dried cranberry and almonds. Serve immediately.(Recipe by: Ocean Spray/Cocktail Times.com)
