David Nepove or aka "Mr. Mojito" is the Director of Mixology for Southern Wine and Spirits in California. He is also one of the co-founders of San Francisco Chapter of the United States Bartenders Guild (USBG), where he holds the position of Treasurer and is currently a National Ambassador to the USBG.

Nepove has over 20 years of bartending experience and competed in many cocktail competitions including 2004 Bacardi Martini Grand Prix in Italty, where he won first place for the Best Italian Aperitif Cocktail.

He has pursued his love of the restaurant business from the time he was a liberal arts major at California State University at Northridge. He has a passion for cocktails made with muddled fresh fruit, herb as well as the classic cocktails.

As a director of mixology, his goal is to create simple cocktails that will inspire both the experienced and novice bartender. "We as mixologists, bar chefs or bartenders need to impress our guests and keep them coming back for more, whether we are making a cocktail with three ingredients or seven," says Nepove.

"Cocktails are meant to be sipped and savored not gulped and guzzled. Drinks should never be too tart or too sweet, too strong or too weak. They should always maintain a balance that you would demand from any dish served in your dining room," add Nepove.

He is a strong believer that a good bartender is one that can make a drink in the method any recipe dictates and one that can make a cocktail to suit the likes of even the most discerning guest.

Nepove has been a part of San Francisco Magazine's "Best Of" issue in 2002 that featured his Kumquat Caipiroska. His speciality drinks have been featured in magazines including San Francisco Chronicle, Restaurant News, Slammed Magazine, Market Watch, Sante and more.
