Ingredients:
- 3 oz Pisco
- 2 simple syrup
- 2 oz kumquat puree*
- 2 oz fresh squeezed lemon juice
- seltzer
add Pisco, simple syrup, lemon juice, kumquat puree to ice filled collins glass, leaving two inches at top for seltzer. Add seltzer and stir. Kumquat for garnish.
*Making kumquat puree:
prepare kumquats by removing green tips. add 15 kumquats, 1/2 oz fresh lemon juice, 2 oz extra fine sugar (if you have) to food processor and puree until all pieces of kumquat rind are gone. (Cocktails created by Gwen Kaiser Sutherland, Master Mixologist, Cocktail Times.com)
