Santorini Collins
Ingredients:
- 2 oz Greek Isles Vodka Infusion
- 3/4 oz fresh lemon juice
- 1/2 oz simple syrup
- 1 oz soda water
- Garnish: Dried apricot and 1/2 dried fig skewered on a pick

Fill a shaker glass with ice. Add infused vodka, juice, simple syrup, and soda. Cap mixer glass and shake vigorously. Strain into a tall glass filled with ice. Garnish and serve. (Cocktail created by: Ryan Thomas Magarian, Master Mixologist, Kathy Casey Food Studios, Seattle WA)

Making Greek Isles Infusion
- 1 bottle (750 ml) Fris Vodka
- 1 lemon, poked with a skewer 20 times
- 1/2 cup dried apricot halves (about 10 pieces)
- 8 pitted dates
- 5 Greek dried golden figs cut in halves
- 1/2 teaspoon anise seed

Rinse lemon well. Place lemon, dried fruit and spices in an infusion jar and top with vodka. Let infuse for 2 days, then strain and place infused vodka in a container.
